Ontario Brewer is dedicating a whole season to food pairings
Posted October 11, 2011 | 2:57 pm, by Mirella
The first podcast of the new 2011-2012 season of Ontario Brewer was posted today. This year, we’re going to be focusing on pairing beer with food. We’ve enlisted four food specialists to help create fantastic food pairings for various Ontario Craft Brewers brands.
This first podcast features the brands of Nickel Brook, and the second part of the podcast (which will be released in two weeks) will feature cheese pairings suggested by Michael Simpson from Leslieville Cheese Market.
Here is some info on the four specialists who will be joining us for this season of the Ontario Brewer Podcasts:
Howard Dubrovsky
Located in the heart of Toronto’s Little Italy, Live and Breathe (L.A.B.) provides a unique dining experience, bridging the best of classic Italian cooking techniques and modern molecular gastronomy. Texture and flavours are inventively and playfully manipulated to create a menu unlike anything else on the strip. Like the food, the decor is a fusion of old world (as expressed by a 1900’s apothecary) and modern design. While intimate, L.A.B. provides a hip environment to rival any restaurant in Toronto.
“Our philosophy is to provide truly outstanding Italian fare in an environment that is conformable and refined. We find great inspiration from classic cuisine and fuse it with the very newest of cooking technologies. I like to think of our food as molecular home cooking.” Howard Dubrovsky
Matt Kantor
Matt Kantor is a graduate of the Culinary Institute of America in New York. He has worked in various capacities in many well-regarded restaurants including Two-Star Michelin Picholine (New York), Gayle and Tangerine (Philadelphia), and Fenouil (Portland). Matt has staged at Michelin and Mobil Five-Star restaurants, including Le Bec Fin (Philadelphia), Trio (Evanston, IL), Lacroix (Philadelphia) and The Vineyards at Stockcross (Stockcross, England). Matt is currently the chef behind the Secret Pickle Supper Club, Little Kitchen and Ghost Chef. Matt lives in downtown Toronto.
