For as long as I’ve known beer educator, Master Cicerone (beer’s answer to wine’s Sommelier), and author Mirella Amato, I’ve always equated her artistic sensibility with that of a student at, say, the Royal Academy of Dramatic Arts in London. A person clearly devoted to the serious study of…
Pairing beer with food in 2 easy steps

Pairing beer with food is fun! Although consistently assembling spectacular pairings takes study, practice and experience, it’s relatively easy to put together a pairing that works. For those who are interested in an in-depth breakdown of how to pair beer with food, my book includes a 10-page chapter that details the various interactions to expect, depending on the taste and flavours present in either the food or the beer at hand. I was chatting with Mutsumi Takahashi on CTV Montréal News today and mentioned my favourite mulled beer; it’s a traditional wassail recipe called lambswool. This mulled beer is made using baked apples that not only fall apart to look like lambswool when cooked but are also delicious! I thought I’d take a moment to share the recipe with you. It’s great for holiday entertaining; with winter fast approaching…what better way to warm up than with a piping hot mulled beer? This recipe is a […]

DISCLAIMER: I thought I’d take a moment to state that I am not writing on behalf of Cask! but, rather, to express some concerns that are my own, but first a little background… There are two parallel cask-conditioned ale scenes going on in Ontario right now: One of these scenes features traditional cask-conditioned ales, like the ones that we champion with Cask!; the kind of beer that CAMRA refer to as ‘Real Ales’. The other features beers finished (or simply packaged) in a cask, with the addition of […]
